I was inspired by this post from a favorite blog and created something that all of us loved!
1 lb ground beef
1 recipe Spaghetti Sauce or your favorite jar of sauce
1/2 c pinenuts, toasted
1 large zucchini, julienned into thin strips
1/4 c grated parmesan cheese
Brown the beef in a deep skillet. Drain, then add spaghetti sauce. If making the homemade version, you can mix it all together in the same skillet you browned your beef in. While this simmers, toast your pinenuts. Add them to your sauce and julienne your zucchini. Add the zucchini and cheese at the same time, about 5 minutes before serving. You don't want the zucchini to cook for too long or it will get mushy.
Salt and pepper to taste.
